Our Wines
Our grapes and range of wines
For the quality oriented consumer we have chosen grapes from various regions in France.
Typically for the Mediterranean region are Syrah, Grenache and Carignan.
The Rhône valley has provided grapes as Pinot Noir and Viognier.
Chardonnay is a well proven grape which develops its full potential here.
The traditional Bordeaux grapes Cabernet Sauvignon and Merlot find themselves suitable conditions on our well maintained vineyards.
TECHNICHAL INFORMATION
VIOGNIER 2007 (white wine)
Grape-variety: 100% viognier
Soil : gravels with clay and limestone, quaternary terrace
Yield: 40 hl per acre
Harvesting : mid-august till the end of august
Wine- making: direct pressing with protection of the juice from oxidation. Slow alcoholic fermentation at 16°C
Ageing: low removing natural gaz to keep the aromas.
Tasting: colour yellow straw ; perfume of acacia with peach and spicy notes. The mouth is well-constitued with aromas of pear. Very fresh and lively finish.
To be served with roasty fishes, shells and shellfish, white meat cooked in a sauce.
To be drank at 9°C
Be kept one or two years.
MOSAÏQUE 2006 (white wine),
Vin de pays blanc des côtes de Thongue
Grape variety : Viognier and Chardonnay
Soil : gravels with clay and limestone
Yield :40 hl per acre
Harvesting : mid-August until end of August
Wine-making : fermentation in new barrels for the chardonnay with stirring of the lees and in tank for the Viognier to keep the fruit aromas.
Maturing of the wine : the natural carbonic gaz is kept until the bottling to preserve the fruit and freshness.
Tasting : yellow golden colour. Citrus perfumes in the nose, fresh and very aromatic in the mouth. Wooded after-taste with a touch of salty almond.
To be served with : all sorts of fish and shells, white meats with sauce. Delicious for aperitif.
To be served chilled at 9°.
Can be kept during two or four years.
CARISMA 2005 (red wine)
Grape variety : Merlot, Carignan, Syrah et Grenache
Soil : gravels with clay and limestone
Yield: 45 hl per acre
Harvesting: mid- September till mid –october
Wine-making: destemmed bunches , short maceration with daily pumping-over for the Grenache; longer maceration for the 3 others varieties
Ageing: 200 days in traditional barrels
Tasting: red deep colour; perfumes of small black fruits, with spices (pepper). Well-bodied and opulent in the mouth, with spicy and woody notes. Long, with a velvety consistency.
To be served with: red and roasty meats, mushrooms ( cepes and chanterelle)
To open and decant a couple of hours before the meal – best temperature: 18°c
Can be drank or kept more : five to seven years
TERRA SANGUINA 2005 (red wine)
Grape variety : Syrah, Cabernet Sauvignon, Merlot
Soil : gravels with clay and limestone
Yield : 30 to 50 hl per acre depending on grape variety and the age of the plants
Harvesting : from the begining of september till mid-october.
Wine-making : traditional with destemming without crushing. Long maceration with control of temperatures during 2 to 5 weeks.
Ageing : in traditional barrels of 225 liters for the three varieties.
Tasting : ruby red colour, complex perfumes of red fruits. Fleshy mouth with ripe morello cherries aromas. Souple and distinguished tannins perfectly harmonious.
To be served with red meats, côte de boeuf, roast meat. Legs of lamb
To be served at 16°.

Planted on hills with gravels on top of the domain Syrah benefits from ideal conditions. It produces a very coloured and tanic wine with aromas of backcurrent and strawberry. Cabernet Sauvignon planted beside the syrah improves the structure of the blending. Merlot brings smoothness and mellowness.
SYRAH 2005 (red wine)
Grape variety : 100 % Syrah
Soil : gravels with clay and limestone
Yield : 40 hl per acre
Harvesting : mid- of September
Wine-making : destemmed grapes, long maceration with daily pumping over.
Ageing : in barrels of 225 liters
Tasting : robe with violet reflects. Perfumes of black fruits are dominant on the nose with a good intensity. The mouth is expressive with a good structure and balance.
To be served with red meats, lamb, barbecue, dish with tomato sauce.
To be served at 16 °, can be drank now. Can be kept 4 to 6 years.
As it grows on hills with gravels in the highest part of the domain, Syrah benefits from ideal conditions production. The wine is tanic, very colourful with rich aromas of blackcurrent and raspberry. The barrel ageing adds a touch of vanilla.
